These bars meet my 3 requirements: fast, easy, and yummy!  This is a wonderful mid-afternoon energy boost – I’ve even had a slice (or two) for breakfast.  I try to keep some of these in my refrigerator regularly, but Wally can never eat just one!  My favorite part of this recipe is that you can totally make it your own by adding or substituting to your tastes; nuts, coconut, chocolate chips, flax seed, other dried fruits, cinnamon, vanilla.  And it really does contain some good (sneaky) nutrition.  Sometimes I add a tablespoon of virgin coconut oil for the healthy fats – even more nutrition!

 

Ingredients

1 cup Peanut butter (crunchy or creamy)

3/4 cup honey (raw/unpasteurized is best)

2-1/2 cups old fashioned rolled oats

pinch of salt (or more to taste, optional)

1/2 cup raisins (or more!)

Directions

Mix the peanut butter and honey thoroughly (I don’t heat it, but you may opt to do so for ease of mixing).  Add the oats and salt, mix unitl everything is incorporated.  If too thin, add some oats – if too thick, add some honey and/or peanut butter.  This recipe is really more art than science!  Once you have a big ball, mix in the raisins.  Press into a pan (I sometimes press into a plastic container with a lid so it’s ready to cut and go).  Chill for at least one hour – although 10 minutes in the freezer will work in a pinch.  Slice and serve!
