Chocolate Chai Seed Pudding

I love easy recipes, especially when I can make ahead.  This makes a nice alternative pudding for special occasions… and no one will EVER know it’s dairy free unless you tell them!

 

 

 

 

Ingredients:

1/3 cups chia seeds

3 TB cacao or unsweet cocoa powder

1/8 tsp salt

Dash of cinnamon

1-1/4 cups non-dairy milk (almond milk, rice milk, coconut milk, etc. or a blend)

3-4 TB maple syrup (to taste)

1/4 tsp vanilla extract (or 1 vanilla bean, split down the center and seeds removed)

Directions:

Mix dry ingredients together with whisk, breaking up any clumps.  Add wet ingredients and stir well.  Let rest for 5 minutes, stir again.  Now let rest in refrigerator for at least 3 hours, or overnight.  It will achieve a nice pudding-like consistency; serve chilled.  Top with fruit, shredded coconut, cashew cream (or other dairy or non-dairy whip cream), or serve plain – YUM!
